RockFish... Opening soon!
Opening RockFish in Plymouth feels like such an obvious thing to do. A sustainable seafood restaurant adjoined on one side by the National Marine Aquarium and on the other by Plymouth fish market and of course the sea. Our first RockFish, in Dartmouth, has proved to be a great success, loved by locals and visitors alike and this year won the National Fish and Chip Awards' best independent fish and chip restaurant. So when this site came up in Plymouth I thought this was the perfect opportunity.
When we open on June 28th it will be my 16th restaurant opening, so I can't really claim to be new to this game and it sometimes feels like setting restaurants up is what I do! It feels quite natural to me - creating menus, designing the look and feel. Any stress comes in making sure you deliver consistency. It's not really stress but a daily challenge in pursuit of excellence and consistency.
At the moment we have the builders and contractors in and it looks like an episode of 'Changing Rooms' with so much going on at once. I'm just waiting for the cooking equipment to go in and the seating and lighting, that's when it starts to feel real. I'll update this blog every now and then and let you know how it's going and what the week's challenges have been.
